FD Drying Comparison With Traditional Drying Methods
The traditional drying methods like sun drying, hot-air drying, spray drying, and vacuum drying, are all done under high temperatures.
Such dried products get shrunk and rigid, hard to dissolve in water. Some ingredients get oxidized, most of the volatile components are lost, the heat-sensitive substances such as protein and vitamins will be denatured, 
and microbes lose their biological activity. However, freeze drying is basically done under the temperature of -30~50℃, then the solid water sublimates directly under vacuum environment.
The temperature is raised above 0℃ in the end to further lower the residual moisture, but will not exceed 40℃. Freeze-drying can excludes 95-99% moisture from the fresh food.
